Magic Mini Muffins

The oven is on and glowing warmth fills your kitchen. The air is heavy with the sweet scent of clove, cardamom, cinnamon and ginger. The dishes are washed and the timer is set. You’re sitting at the table leafing through a magazine or chatting with an old friend on the phone. You hear the buzzer go off, slip oven mitts over your hands and pull out a heavenly tray of chai muffins baked to perfection with apple, zucchini and carrot.

Magic Mini Muffins

Ingredients:

  • 2 eggs
  • 1/2 cup vegetable oil
  • 3/4–1 cup sugar
  • 1/2 cup each grated apple, zucchini and carrot
  • 3 cups semolina flour
  • 2 1/2 tsp. Oregon Chai The Original™ Chai Tea Latte Powdered Mix – Packets
  • 2 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 2 cups vanilla yogurt

 

Directions:

Preheat the oven to 350 degrees. In a large bowl, mix together the eggs, oil and sugar. Stir in the grated fruit and veggies. In another bowl, mix together the flour, Oregon Chai Original Latte Mix, baking powder and salt. Pour the dry ingredients into the bowl of wet ingredients and combine. Mix in the vanilla yogurt, being careful not to overmix. Spoon the batter into oiled mini muffin tins and bake for 10–15 minutes. Let cool. Top with ½ tsp vanilla yogurt.

    I have recently been “hooked” on Chai , the liquid I enjoy in cold drinks, but now, at 5 degrees, the pwd. is so great…do you ever have coupons for your products, and the muffins are very tasty. thank you
