Ingredients
Fruit Filling | |
Pitted Prunes | 3/4 cup |
Seedless raisins | 1/3 cup |
Oregon Chai The Original™ Chai Tea Latte Concentrate | 1/4 cup |
Shelled walnuts | 1/4 cup |
Apple with peel | 1/4 |
Sugar | 2 tbsp. |
Juice and rind of 1/4 lemon | |
Dough | |
Butter | 2/3 cup |
Sugar | 1/2 cup |
Large egg | 1 |
Vanilla | 1/2 tsp. |
Unbleached all-purpose flour | 2 1/2 - 3 cups |
Baking powder | 1 tsp. |
Salt | 1 dash |
Directions
Cream together butter and sugar. Add egg and vanilla and continue creaming until smooth. In a separate bowl, combine flour, baking powder and salt. Gradually add dry ingredients to wet and blend until the dough is well-mixed and forms a ball. Refrigerate dough 2 to 3 hours, or overnight. To make the filling, simmer prunes, raisins and Oregon Chai® in a covered pan for 10 minutes, stirring occasionally. Add nuts and apple and simmer for another 5 minutes. Remove from heat. Place cooked fruit mixture into food processor along with sugar, lemon juice and lemon zest and grind. Allow filling to cool completely before assembling cookies. To assemble cookies, roll out ¼ of the dough to 1/8 inch thick. Cut into circles with a 2 ½ -inch diameter. Drop 1 teaspoon of filling into center of circle. Moisten outer edge of circle with water, or with Original Chai concentrate for extra flavor. Seal and pinch together edges, shaping into a three-sided triangle. Place on a greased or lined cookie sheet and bake at 375° for 10 minutes or until golden.
