Ingredients:

  • 2 Tbsp. packed brown sugar
  • 1 Tbsp. salt
  • 3 Tbsp. melted butter
  • 1 Tbsp. (one package) yeast
  • 1/4 cup warm water
  • 1/4 tsp. lemon extract
  • 2/3 cups water
  • 1 1/3 cups Oregon Chai The Original™ Chai Tea Latte Concentrate
  • 1 cup assorted herbs (parsley, sage, rosemary, etc.)
  • 5–6 cups flour

Directions:

In a small bowl, combine yeast, sugar and water. Set aside until yeast has dissolved. In large bowl, combine salt, lemon extract, water, Original concentrate, butter and herbs. Add yeast mixture. Gradually add flour until you cannot add any more. Place dough on floured board and let rest 10 minutes. Knead until smooth, adding more flour as necessary. Return to greased bowl and let rise until double. Punch down and let rise again. Divide into 2 loaves. Put each loaf in greased bread pan. Let rise about 45 minutes. Bake 350°F, 45–50 minutes, until golden brown on top. Remove from oven and remove immediately from pans. Mix together 1 egg and 1/2 tsp. oil and brush top of bread. Yields 2 loaves.

Whole Wheat Chai Molasses Bread

This recipe is a quick bread, without yeast. For a little extra sweetness, add ½ to 1 cup of raisins or craisins to the batter. Makes two 9 x 4½ inch loaves.

  • 1 1/2 cups Spiced Original Chai Tea Latte Concentrate
  • 1 1/2 cups milk
  • 3/4 cup canola or vegetable oil

  • 2 tsp. baking soda
  • 1 1/2 tsp. salt
  • 1/2 cup honey
  • 1/2 cup molasses

Heat oven to 375°F and place rack in center. Lightly grease two 9 x 4 ½ inch pans with oil. In a large bowl, sift together whole wheat flour, all purpose flour, baking powder, baking soda and salt. Add Chai Tea concentrate, milk, oil, honey and molasses, and stir until well blended. Add in raisins if desired and stir until evenly distributed. Divide batter evenly between the two prepared pans. Even out tops with a spatula. Bake until a cake tester inserted in the middle comes out clean, about 45 minutes. Remove from oven and cool on a rack. Serve and enjoy! Remaining bread should be refrigerated or can be frozen.
